I haven't had a clue what to make for dinner the past few weeks, so I thought it best to bring back the menu plan! It really did help a ton when I was making one before. I thing the kids are getting sick of the last minute junk I pull together too.
In no particular order:
Chicken & butternut squash saute
chicken sandwiches w/ avocado slices, steamed broccoli and carrots
turkey tacos
bbq ribs(crock pot), zucchini, mashed potatoes
spinach and bacon frittata
eggplant Parmesan
left overs

I understand about that last minute throwing things together. Menu plans help me know what to take out for dinner the night before. Then there is no last minute throw together. We also don't tend to eat out if we know that there is something in the frig that will spoil if not eaten.
From time to time I find myself "too busy" on Sunday nights to sit down and figure out a menu plan... and how I regret it the rest of the week! It's good to be back on the wagon, isn't it?
I so agree with everyone! The week's I try to throw things together are usually a disaster for the budget and my sanity! :)
