Menu Plan Monday 11/09

I'll admit I have been using prepackaged foods a lot lately.This has left us feeling cranky and tired, so I am trying to ease back into cooking real food for the family.

My son has always been clingy around dinner time (he's 22 months). I was able to just stick him at the table and talk to him and serve him a small snack while I finished cooking the meal, but he is too loud to do that with now. The baby sleeps in the room right off the kitchen and my hands are tied if he wakes her up before I finish cooking. I need to work out a new arrangement for dinner prep time. Maybe more slow cooker meals I can get put together while the kids eat breakfast.


Any way, here is what I'm going to try to cook up this week:

Pork loin, green beans, mashed potatoes

Chicken and Squash Saute with Rice
(I'm going to use quinoa instead of rice)

Beef stew, rolls

eggs, bacon, hash browns and fruit

Chili over baked potatoes, side salad (I'm going to be lazy and use the canned stuff- I need some easier options for the hectic days)

BBQ Pork sandwiches, peas

Left overs

What I still need to pick up to pull it off:

-bread .66
-potatoes 1.88
-red onion .75
-butternut squash 1.50
-pasta sauce .50
-packaged salad .98
-tomato 1.00

estimated total= $7.27

And I will be checking out the other menu plans @ I'm an Organizing Junkie for inspiration next week.

I was reading your post about how it's hard to prepare dinner with your young children. Have you considered doing some freezer cooking? I'm not sure if you're familiar with this or not but it might make your dinner prep time a lot easier...if you have time to spend on prepping them for the freezer, that is. I know you're busy with your kids so close in age. I've been doing this a lot more lately and it has been VERY helpful b/c I don't have as much time to spend on prepping a meal as I once did. Just a thought...

That is a great suggestion! I have been thinking about doing this. I do not have a ton of pans and baking dishes right now to do this easily(I have one single frying pan and 4 baking dishes total). I have been holding off obtaining more until we move because we lose those kind of things somehow every time we do, lol.

Until then I try to cook things that will have leftovers that I can turn into something else later in the week.
