I am doing pretty well with the Vegan diet so far, but it is so tempting to eat the kids' food! So, I am going to attempt to feed everyone Vegan Dinners. My husband is being a great sport about this. It really makes it easier when you have someone close to you backing your efforts.

One Day Hubby cooks for him and the kids and I eat Butternut Squash Soup from the freezer

This week sounds soo tasty! I'm going to have to try these. We made quiche this week too! Definitely a vegetarian staple! = )
I am on a diet that is free of all dairy, eggs, nuts and soy (not by choice but my seven month old is allergic to all those and I want to breastfeed him). For me I thought that the hardest to avoid would be chocolate, but it has been cheese(there is no good cheese substitute Enjoy Life makes really good chocolate chips). If you are not eatting eggs or milk I would recommend either drinking Silk Soy milk (which is on sale at Kroger this week) or SoDelicious Coconut milk (this is what I drink, rice milk is horrible). If you really miss ice cream SoDelicious makes Coconut ice cream that is delicious (but over $5/pint). Thanks for the tips Amanda! We like Almond milk, rice milk, and soy milk. Coconut milk for drinking isn't as tasty, so we just use that for cooking.
