Black Bean Soup
1lb dried black beans, soaked over night
2 carrots chopped(or minced)
1 red oninon finely chopped
3 cloves of garlic
1 14.5 oz can (roasted) diced tomatoes, undrained
6 cups of liquid (water/broth)
1/4 c. nutritional yeast(optional)
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp coriander
1 tsp oregano
2 tsp cumin
1/4 c. lime juice (optional)
fresh cilantro for garnishing (optional)
Place all ingredients except cilantro, lime juice, and nutritional yeast in a crockpot and stir.
Cook on low for 7-8 hrs or high for 3-4 hrs.
Add the remaining ingredients and stir again.
Serve over brown rice, quinoa, or any other grain you like!
